The development of science and technology in agriculture, has been instrumental in increasing the production of various agricultural commodities. But climate change is also uncertain world led to decreased agricultural productivity. World energy crisis resulted in higher prices of agricultural commodities due to competition between food and energy are higher. Efforts to utilize biomass (agricultural products) has started a lot of research, not only as raw material for bioenergy, but also in an attempt to exploit agro-products into valuable economic products, and realize clean production in agro-industry.

Abstract

Indonesia is one of the countries with the largest forest in the world. The tropical climate and high rainfall cause a lot of biodiversity in Indonesia’s forests. The existence of these forests can be utilized by many parties, both the government and the community in accordance with their functions to improve welfare. The government through the Central Statistic Agency has provided data information related to the forest area in various regions, one of which is Central Jawa Province but still requires development to obtain important information in the data. This study aims to divide the district based on forest area including protected forest, protected area, area for production, and area for other users in Central Java province using the K-Means Data Mining method. The data is obtained from Central Statistic Agency for the Central Java area, where four types of forest are to be grouped. The results of this study indicate that the grouping of districts based on the area of forest owned is based on the smallest Davies Bouldin (DB), which is 0.436 in the grouping with 2 clusters. The two clusters are distinguished based on the value of the proximity of the forest type attribute with the centroid point in each cluster. The clustering process grouped 26 districts in the province of Central Java into cluster 1, while cluster 2 consisted of 3 districts in Central Java, namely Grobogan, Blora, and Brebes districts. Abstract

The tofu industry, especially small industries, still has a low awareness of the environmental impacts caused by the production process. Reduction of environmental impact and production efficiency in tofu industry activities can be solved by applying cleaner production. This study aims to examine the applications of cleaner production in tofu processing SMEs in Indonesia. The method used is an exploratory approach to review the contents of several articles from national and international journals. Reviews on articles can be in the form of identification of the tofu processing, problems, CP reccomendations, results of technical, financial and environmental analysis and the priorities for cleaner production. CP opportunities that can be recommended for tofu processing SMEs in Indonesia are 1) The washing process in stages, 2) Making water recycling installations, 3) Making additional funnels on the milling machine, 4) Making energy-saving stoves, 5) Substitution of firewood with coconut shells, 6) Utilization of tofu dregs for animal feed, 7) Making Nata de Soya from whey, 8) Good Manufacturing Practice (GMP) application. Abstract

With a large population, Indonesia requires the food industry's self-sufficiency. The food industry's self-sufficiency is faced with complex problems starting from raw materials, production, and distribution to the market. This study aims to analyze the problems in the food industry and the appropriate policies. This research uses the policy analysis method of Patton, Sawicki, and Clark: defining the problem, determining criteria, identifying alternative policies, and evaluating and comparing alternative policies; as well as using three impact evaluation criteria: national economy, industrial capacity, and political-social. The data used is secondary data from the results of previous studies. The results showed that from the nine problems, 20 policy alternatives were obtained. Six of these policies have significant economic impacts: (1) Provide incentives to suppliers and R&D institutions in terms of supply of seeds/seeds, cultivation as well as harvest and post-harvest; (2) Provide guidance and facilities in building partnership networks among suppliers and growing start-up companies; (3) Setting up fiscal and non-fiscal incentives for technology development and construction of product handling assembly plants in the country; (4) Facilitating compliance with national and international regulations and standards in terms of food safety, especially hygienic food practices, management and control of food safety; (5) Encouraging and controlling the industry to provide clear information regarding product content, free of hazardous materials and halal labels on products sold; and (6) Increasing bilateral and multilateral cooperation and diplomacy with potential partner countries/regions and trade representatives in destination countries. Abstract

Fish oil is a lipid fraction that can be obtained from the extraction process of fish meat and by-products of fish processing. Generally, fish oil is in the triglyceride form, but tends to be unstable and easily oxidized, therefore fish oil is converted to the ethyl ester form which has better stability against oxidation. This study aims to analyze the effect of the transesterification process conditions using the sonication method on the yield and quality of fish oil ethyl ester produced. The design used was a Completely Randomized Factorial Design with 2 factors, there were the sonication time (10, 20, and 30 minutes) and the concentration of KOH catalyst (0.5, 1.0, and 1.5%). The results showed that the highest yield value was found in the 10 minutes and 0.5% KOH of 91.38%. The best ethyl ester quality from the data obtained was found in the 30 minutes and 0.5% KOH with a FFA value of 0.50%, acid value of 1.09 mg KOH/g, saponification value of 214.93 mg KOH/g, ester value 213.84 mg KOH/g, peroxide value 5.86 meq/kg, p-anisidin value 30.02 meq/kg, total oxidation value 40.44 meq/kg, density 0.8745 g/m3, and viscosity 4.81 mm2/s. Abstract

As the world's largest palm oil producer, Indonesia has enormous potential for producing palm kernel expeller waste. Only 7% of Indonesia's palm kernel expeller (PKE) is processed into animal feed. It is necessary to utilize both wastes from palm oil processing and the workers' environment to support certification in palm oil plantations. This research aims to identify amino acid and lipid profile, total protein, fat, feeding rate, and survival rate BSFL using a palm kernel expeller for feed. The feed experiment in this research was PKE, fermented PKE, PKE with food waste, and fermented PKE with food waste as a control. The optimum result was fermented PKE with food waste with a protein total of 51.45%. Using BSFL for feed should have high protein content and low fat. The fat of BSFL fermented PKE with food waste is lower than BSFL with food waste. The feeding rate, survival rate, and BSFL mass are lower than BSFL with food waste. BSFL has the potential to reduce PKE waste and domestic food waste. The amino acid profile of BSFL PKE with household food waste consists of L-Glutamic Acid, L-Leucine, L-Arginine, L-Tyrosine, L-Valine, and L-Phenylalanine. L-Glutamic acid was the highest amino Acid in BSFL (36.396 g/kg). The type of amino Acid in BSFL is suitable for animal feed. The lipids in BSFL PKE with household food waste are lauric acid, oleic acid, unsaturated fat, monounsaturated fat, palmitic acid, myristic acid, and linoleic acid. The highest content of lipids is lauric acid (12.126%). The type of fat in BSFL can be used to produce biodiesel. Abstract

Edible film is one of the coating materials used to wrap food ingredients. The edible film can be used to preserve food products, especially ready-to-eat foods. The process of making the edible film was carried out in this study with the addition of clove oil, with the hope that it can become an antimicrobial on the edible film. The addition of clove oil to edible film applied to wet cakes aims to determine the effect of clove essential oil as an antimicrobial on edible film from taro starch base material. This study used a non-factorial Completely Randomised Design (CRD) with the effect of essential oil concentration. Starch and glycerol were used in the same concentration. The concentrations of clove oil used were 0% v/v, 0.5% v/v, 1% v/v and 1.5% v/v. The parameters used in this study were thickness, Water Vapor Permeability (WVP), water absorption, Scanning Electron Microcopies (SEM), Total Plate Count (TPC) test and water content. The results of this study showed that the concentration of clove oil had no effect on the thickness and value of Water Vapor Permeability (WVP) but affected the level of water absorption in edible film. The best edible film selected was the edible film added 0.5% essential oil with a thickness of 0.030 mm, WVP of 2.874 x10-11 kg.m/Pa.s.m2 and water absorption of 65.08% w/w. The edible film was selected based on the smallest layer so that it can be applied to layer cakes, in the best experiment it was stored for 4 days and then analysed for moisture content and TPC. The ability of edible film with 0.5% clove oil concentration can inhibit bacterial growth and maintain product quality for four days. Keywords: antimicrobial, edible film, clove oil, taro starch

Abstract

Cluster of potato chips is the one of SMEs groups which growing up in Batu City. The existing conditions in 2020-2021 caused some problem for the clusters it is a decreasing in demand, marketing, and business performance due to impact from pandemic which causes an imbalance in the number of sales with the production produced. In the first trimester of 2022, demand product of potato chips has increased so the efficient performance for production process is needed to recovery. The efforts to restore a business performance can be done by increasing efficiency in the supply chain institutional system. The purpose of research is analyze performance value, find out input sub-variables who most influence, and propose improvement strategies in clusters of potato chips. This research used Data Envelopment Analysis CCR-I Dual models with input sub-variables consist of cash to cash cycle time, lead time, flexibility, and cost. Sub-variable output consist of percentage compliance with quality standards, order fulfillment, delivery performance,and revenue. This analysis was carried out on SMEs to retailers with Decision Making Unit (DMU) the result showed that DMU 2, DMU 3, DMU 5, DMU 6, and DMU 7 were in efficient condition meanwhile 4 DMUs are inefficient condition. Input sub-variable can impact performance efficiency is cost of supply chain. To increase performance value, DMU in clusters of potato chips must be minimizing input variables, improving of production planning, sales forecasting, and strategy innovation in marketing to increase sales and product competitiveness. Abstract

This study aimed to determine the effect of edible coating of breadfruit starch on the quality of cayenne pepper and to find out how long the optimal storage of cayenne pepper coated with an edible coating breadfruit starch and stored at room temperature. This study used a complete randomized design with 5 treatments and 3 data tests. The observation results were analyzed using ANOVA and the continued test DNMRT at the rate of 1%. The treatment in this study was the duration of storage of cayenne pepper coated with edible coating for 3, 6, 9, 12, and 15 days. The results showed that the length of storage of cayenne pepper coated with edible coating had a significant effect on water content, vitamin C, pH, and weight loss. Based on the color and texture test results of cayenne pepper coated with edible coating, it was shown that storage up to day 3 was most preferred by the panelists, with a moisture content of 85.32%, vitamin C content of 268.36 mg/100 g, pH of 3.35, and weight loss of 22.44%. Abstract

The rice supply chain is important to achieve food security. It has various perspectives, challenges or issues that causes a complex problem in supply chain system. The existing problem are related to food availability, inventory level, fragmented distribution, affordability of prices, accessibility, variation of business processes and the environmental impact from production and logistics system. Moreover integration framework in the dimension of sustainability is limited. The objective of this article is to identify current problems to construct the idea of supply chain integration and to build the formulation for improvement the value of rice supply chain. Fifty articles discuss rice supply chain. The remaining discuss on increasing rice productivity, inventory optimization, performance improvement, and traceability. The VOS viewer result showed that sustainability is connected to the supply chain at a distant position which indicates that sustainability has the opportunity to be studied wider range in future research. The gap analysis showed that the production increase is limited to agronomy innovation and didn’t consider sustainable characteristics input. The indirect innovations that use information technology for precision farming also had not been comprehensively collaborated. The production absorption had not been considered in inventory optimization and traceability system had not been developed for supply availability. The improvement activities to fill the gap will transform supply chain performance more efficient, responsive and minimum environmental impacts for the enhancement of the sustainability value of the rice supply chain.
